What’s cooking…

Here are some good recipes we’ve tried at our house.  It’s an eclectic mix of sweet and savory.  We liked it and maybe you can give it a try.

CPK inspired pizzas: BBQ faux chicken pizza and Thai faux sausage pizza

I got the recipe for the pizza dough here.  I used all whole wheat flour instead of white flour and added about 3 tbsps of gluten to make the dough workable.

Thai peanut pizza. Toppings: faux sausage, zucchini, broccoli, onion, garlic, kale, carrots, cilantro and mozz cheese.

For the BBQ sauce, I used Sweet Baby Ray’s as the base and added faux chicken, zucchini, broccoli, onion and garlic that had already been sautéed in olive oil.  I also threw on some mashed up tofu for additional protein.

For the Thai Peanut sauce I used this recipe.  Except I didn’t have hoisin sauce, so I used a little bit of ketchup.  We added the same toppings as the other pizza, except for faux sausage.  To finish we used mozzarella, cilantro and kale on both, as well as shredded carrots on the thai one.  They were so yummy, and pretty healthy!
